Turmeric Coconut Curry Shrimp
Quick and flavorful shrimp cooked in a creamy turmeric coconut sauce. Ready in under 30 minutes - perfect for weeknight dinners.
Ingredients
- 1 lb (450g) large shrimp, peeled and deveined
- 1.5 teaspoons JJ Spices turmeric powder
- 1 can (400ml) coconut milk
- 1 tablespoon curry powder
- 2 tablespoons coconut oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 red bell pepper, sliced
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- Juice of 1 lime
- Fresh basil and cilantro for garnish
- Cooked jasmine rice for serving
Turmeric Amount: 1.5 teaspoons turmeric powder for 4 servings

Season shrimp with half the turmeric and a pinch of salt.

Heat coconut oil in a large skillet over medium-high heat.

Sear shrimp for 1 minute per side. Remove and set aside.

In the same pan, sauté onion until softened.

Add garlic, ginger, and bell pepper. Cook for 2 minutes.

Add remaining turmeric and curry powder. Stir for 30 seconds.

Pour in coconut milk, fish sauce, and brown sugar. Simmer for 5 minutes.
