Golden Turmeric Lentil Soup (Dal)
Comforting and nutritious red lentil soup infused with turmeric and warming spices. A protein-rich vegan meal that's perfect for any season.
Ingredients
- 1.5 cups red lentils, rinsed
- 2 teaspoons JJ Spices turmeric powder
- 6 cups vegetable broth or water
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 can (400ml) coconut milk
- 2 tablespoons olive oil or ghee
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili flakes
- Salt to taste
- Fresh cilantro and lemon wedges for serving
