Golden Turmeric Lentil Soup (Dal)

Ingredients

  • 1.5 cups red lentils, rinsed
  • 2 teaspoons JJ Spices turmeric powder
  • 6 cups vegetable broth or water
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can (400ml) coconut milk
  • 2 tablespoons olive oil or ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili flakes
  • Salt to taste
  • Fresh cilantro and lemon wedges for serving

Turmeric Amount: 2 teaspoons turmeric powder for 6 servings

Instructions

    Heat oil in a large pot. Add cumin seeds until they splutter.

    Add onion and cook until softened, about 5 minutes.

    Add garlic and ginger, sauté for 1 minute.

    Add turmeric, coriander, and chili flakes. Stir for 30 seconds.

    Add rinsed lentils and vegetable broth. Bring to a boil.

    Reduce heat, partially cover, and simmer for 20-25 minutes until lentils are soft.

    Stir in coconut milk and season with salt.

    Simmer for another 5 minutes.

    Serve hot with cilantro garnish and lemon wedges.
